Spicy, Sweet Goat Cheese Melt\u00a0<\/h2>\n

PG tested<\/strong><\/p>\n

Just like the sign, a secretive and explosive flavor hides inside the sandwich, and the creative interplay of subtly spicy peppercorns, sweet apricots and tangy goat cheese is revealed only when you bite into it.<\/p>\n

\n

8 ounces goat cheese at room temperature
\n1 tablespoon plus 1 teaspoon milk, plus more if needed
\n2 teaspoons cracked black peppercorns
\n2 ounces dried apricots, finely chopped
\n2 teaspoons honey
\n1 teaspoon finely chopped thyme
\nSalt to taste
\n8 sandwich-slices walnut or multigrain bread
\n2 tablespoons olive oil<\/ingredients><\/p>\n

Mix together goat cheese and milk until smooth and creamy. Add more milk if mixture is too stiff. Add peppercorns, apricots, honey, thyme and salt; stir well.<\/p>\n

Brush one side of each bread slice with oil. Place it oil side down on work surface. Divide and spread cheese mixture on the slices. Top with remaining slices, oil side up.<\/p>\n

Heat large skillet. Place sandwiches in pan; cook for 3 to 4 minutes until golden brown.<\/p>\n

Turn sandwiches, pressing lightly with spatula, and cook for 3 to 4 minutes.<\/p>\n

Flip once more; cook for 1 more minute.<\/p>\n

Remove from pan and let cool for 5 minutes. Cut in half and serve.<\/p>\n

Makes 4 sandwiches.\n<\/p><\/div>\n
