Ginger-Cashew Blondies<\/h2>\n

Pisces\u00a0are known to be original and inventive and put a new spin on the ordinary. So showcase that individualism with blondies made with crystallized ginger, cashew nuts and a dash of rum. The delicious bars could quickly become mainstream once the word gets around.<\/p>\n

\n

1 stick melted butter
\n2 cups light brown sugar
\n2 eggs
\n2 tablespoons rum
\n2 teaspoons vanilla extract
\n1\u00bd cups flour
\n2 teaspoons baking powder
\n1 teaspoon salt
\n\u00bd cup finely chopped crystallized ginger
\n\u00bd cup cashew nuts, broken coarsely<\/ingredients><\/p>\n

\n

Preheat oven to 325 degrees. Line a 9-by-13-inch pan with foil and coat it with cooking spray.<\/p>\n

In a bowl, cream butter and brown sugar. Add eggs, rum and vanilla and beat until combined and creamy.<\/p>\n

Stir in flour, baking powder and salt. Fold in ginger and cashews.<\/p>\n

Bake 40 to 45 minutes.<\/p>\n

Makes 15 squares.\n<\/p><\/div>\n
