Quinoa Chili

Quinoa Chili

Aquarians have a quirky side, so why not make a chili with quinoa? But also they like to please everybody with known flavors, so add the usual suspects — chili powder, tomatoes, pinto beans and corn, and garnish with cheddar cheese.


2 tablespoons olive oil
2½ teaspoons chili powder
1 cup uncooked quinoa
1 can (14.5 ounces) diced tomatoes
1 can (15 ounces) pinto beans
1 cup frozen corn kernels
Sea salt and freshly ground pepper
2 tablespoons chopped cilantro
½ cup grated sharp cheddar cheese


Heat oil in a pan and toast chili powder and quinoa for 2 minutes.

Add chopped tomatoes, 2½ cups water, beans and corn. Season with salt and pepper. Cook for 20 minutes until quinoa is tender.

Divide between 4 bowls and garnish with cilantro and cheese.

Makes 4 servings.
